Sleep zzzz...

Sleep, or lack of it, is the hot topic that everybody is talking about. A good night’s sleep and rest is essential to a healthy existence. Not only is it the root of your physical and mental health, but your overall quality of life!

Not to be underestimated, sleep helps us maintain a healthy weight, balanced hormones, it controls our sugar level, repairs our heart and blood vessels, supports our mental health by keeping our brains working properly. It's all about your feet!

Be sure to pamper your feet… give yourself a pedicure and moisturise your feet daily (apply cream before bed and then put your socks on before you get into bed for your very own home pedicure!) Soft supple skin is what you need… and keep your toenails short.

A breakfast too good to miss!

In everything there are always positives and negatives. One of the positive things that many have gained from lockdown, being on furlough or working from home, is time. No more commuting, eating on the run, or worse still skipping meals altogether. Of course the negative is breakfast, considered by some to be the most important meal of the day. At home this gets missed and replaced with continually grazing… well when the fridge is probably only a few meters from wherever you are in your home, the temptation is just too enormous!

But missing breakfast comes with a host of negatives, low energy, you might feel moody, irritable, it can encourage you to gain weight, less concentration, you start cravings… Oh let’s stop there, it’s just not worth it, let us tempt you into a great breakfast that is healthy, packed with nutrients, easy to prepare and delicious, all bought to you with love and care from the kitchen of our good friends Penny Brohn… well it would be nice if they could actually bring it to us, that bit you will need to do for yourself!

Turkish Eggs:

Serves 4

Ingredients

  • 2 tbsp olive oil
  • 1-2 cloves garlic, crushed
  • 2 onions, sliced
  • 2 sweet peppers (red, orange or yellow), de-seeded and sliced
  • 1-2 chillies or 1 tbsp harissa paste (optional)
  • 400g tin chopped tomatoes
  • 4 eggs
  • Small bunch chives or parsley, chopped
  • Freshly ground black pepper

Method: 

  • Soften onion, peppers, garlic and chillies (if using) in the oil of a heavy bottomed frying pan
  • Add the tomatoes and simmer until the liquid has reduced and season
  • With a wooden spoon create 4 wells in the tomato mixture and crack an egg in each
  • Cover the pan and cook eggs over low heat until just set, about 3 minutes

Tip: Replace fresh peppers with a jar of roasted peppers for ease and speed. The sauce can be made in advance and kept in the fridge.
